So simple and quick to throw together but delicious and sophisticated in flavour. You have the peppery taste of the rocket contrasted with the sweetness of the pear and slight bitterness of the walnuts, brought together by the classic balsamic dressing. Great to impress your friends if taking a dish for a dinner party or for that special “date night” as an accompaniment to any dish.

Ingredients
  • ½ bag of Fresh Rocket
  • 1 large bosch pear or two small pears, sliced thinly
  • 75 grams creamy blue cheese (I like Castello)
  • 30 grams or a small handful of walnuts, broken up
  • 1-2 dried figs (optional), chopped into small pieces
  • 1/3 cup olive oil
  • 1 tbsp Dijon or seedy mustard
  • 2 tbsp balsamic vinegar
  • 1 garlic clove, minced (optional)
  • 1 tsp manuka (or other) honey or brown sugar (optional)
  • Salt and freshly ground pepper
Directions
  • Step 1 Mix together in a small bowl the garlic, balsamic, honey or brown sugar and mustard
  • Step 2 While stirring vigorously drizzle in the olive slowly
  • Step 3 Taste and add salt and pepper to taste and set aside
  • Step 4 Put the rocket in a large bowl
  • Step 5 Distribute the pear pieces throughout the salad leaves
  • Step 6 Break of small dollops of the blue cheese and distribute evenly
  • Step 7 Drizzle on balsamic dressing and toss lightly
  • Step 8 Top with walnuts and figs and serve
